Makes approx. 70 cookies

1 ½ cup all purpose flour
1 bag Hyggelig Hot chocolate mix
1 tsp baking soda
1 tsp salt
3 sticks unsalted butter, softened
1 ¾ cup sugar
4 eggs
2 tsp vanilla

Preheat over to 375 degrees F

Mix together flour, Hyggelig Hot Chocolate mix, baking soda and salt in a medium bowl.

Beat together butter and sugar with an electric mixer until pale and fluffy, then beat in eggs and vanilla until combined.  Add mix of dry ingredients and mix until just combined.  Do not over mix.

Drop batter by the teaspoon or pipe with a pastry bag about two inches apart on a ungreased baking sheet.  Cookies will spread.  Bake until they are puffed and just set, about 10 minutes.  Transfer to a rack to cool.

Enjoy with a warm mug of Hyggelig Hot Chocolate!
